Zharkoye (Beef & Potato stew)

I met a Ukrainian/Bulgarian lady I bought a camera from who suggested I try making Zharkoye, safe to say it’s amazing. Thank you Lena!
Ingredients:
- diced beef
- diced potatoes
- garlic
- cumin powder
- paprika
- tomato Passata or puree
- beef stock
- corn starch
- thickened cream
- fresh dill
- salt & pepper
Method:
1. Brown the beef and remove.
2. Cook the onion, add paprika & cumin powder and garlic. Stir and combine, adding water as needed to lift the fond and prevent burning.
3. Add the beef back in, passata sauce, beef stock and bring to a gentle simmer for 1hr.
4. Add diced potatoes, simmer for another hour or until the potatoes are cooked.
5. Add the corn starch & cream slurry to thicken the stew, season with salt and pepper to your taste and fresh dill if you like.
Serve up and enjoy!
